Agedashi Tofu Recipe

Agedashi tofu is surprisingly easy to make! Just be gentle whilst handling the tofu for they are liable to break apart easily!

Ingredients

  • 1 block Japanese silken tofu – cut into 6 cubes
  • Corn starch
  • Bonito flakes (katsuobushi)

Tentsuyu Broth

  • 1 cup dashi
  • 2 tsp soy sauce
  • 1 1/2 tbsp mirin
  • 1 tsp sugar
  • 2 tbsp sake

Method

  1. Gently blot out excess water from tofu cubes using paper towels then coat with corn starch.
  2. Combine ingredients for tentsuyu broth in pan and bring to a simmer.
  3. Heat oil in wok and deep fry tofu cubes until crispy and lightly brown in colour.
  4. Drain excess oil from tofu cubes on paper towels.
  5. Combine dish by placing tofu in small shallow bowls and pouring the hot tentsuyu sauce over tofu pieces.
  6. Garnish with bonito flakes and serve immediately.
