Fried Rice With French Beans
Loved the way this rice dish is prepared as the dried shrimps enhanced the taste of the fried rice. And once again, it’s another simple yet complete meal in one dish with the necessary carbohydrates, veg and meat. This recipe is suitable for 3-4 pax.
Ingredients
- A small bunch of french beans – diced
- 2 cups rice – cooked and cooled
- 30g dried shrimp – soaked in water till soft and then minced
- 2 chicken thighs – cubed
- 2 eggs – lightly beaten and flavoured with a bit of soy sauce, pepper and sesame seed oil
- 2 shallots – sliced
- 1 tbsp soy sauce
- dash of fish sauce
- pinch of salt & pepper
Marinade
- 1 tbsp corn flour
- 1 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp sesame seed oil
- dash of pepper
- 1 tbsp far tiew wine (chinese cooking wine)
Method
- Marinate chicken with marinade for an hour.
- Heat some oil in a wok, fry the eggs first, scrambling them in the process. Dish up and put aside.
- Next, fry the shallots till golden then add in the dried shrimps. Fry this until fragrant.
- The french beans go in next.
- Then add in the cubed chicken thighs and brown them.
- Finally add in the rice, soy sauce, salt and pepper and fish sauce.
- Stir-fry for a while then mix in the scrambled eggs.
- Dish and serve.
This acts as a really good “tv dinner”. I usually cook a large portion and then pack them in individual serving containers for freezing. On days when I’m feeling way too lazy to cook, I just out a packet and reheat.
